Chef De Partie (ฺBakery)

1. Ensure all food preparation and presentation are in accordance with the agreed composition, weight and quality as detailed in the menu specification and avoid food wastage. 2. Ensure hygiene standards laid down by the company, airlines and the local registrations are strictly adhered to. 3. Keep the section clean at all times. 4. Assist the meal presentation to airline representatives. 5. See that house rules are followed and enforce. 6. Ensure all kitchen equipment are maintained properly and cleaned after use replacement programs are undertaken. 7. Ensure all kitchen practices are safe and in accordance with the company safety regulations. 8. Provide reference, guidance and training to staff and resolve problems as referred. 9. Advise and propose to the Executive Chef and Sous Chef new ideas with a view to and economical utilization of food. 10. Supervise staff to get the daily work load done as a high standard. 11. Assure temperature checking are made. 12. Ensure freezer are clean, temperatures are checked and food movement are in order. 13. Ensure date marking in cooking area / dishing-out area and freezer are practices at all times. 14. Advice Demi Chef, Cook, Assistant Cook and Worker to cook according to recipes. 15. Check and follow up on HACCP forms / requirements 16. Perform and carry out other related duties or special tasks as assigned.
